The Republic of Ireland international becomes Celtic manager Neil Lennon's 11th signing of the summer.
The 22-year-old striker, who has won three caps for his country, was top scorer for Hibs last season with 23 goals.
With Marc-Antoine Fortune leaving Celtic for West Brom on Friday, Morten Rasmussen on loan at German club Mainz and Gary Hooper out for another month with a calf injury, Hoops boss Neil Lennon was keen to bolster his attacking options before the close of the transfer window and Stokes was his first option.
The 22-year-old, who has three caps for the Republic of Ireland, first made his mark in Scottish football with Falkirk during the first half of season 2006-07, when he was on loan from Arsenal.
He had the chance to become a Celtic player in January 2007 but turned down a Parkhead move to sign for Sunderland.
The move to the Stadium of Light did not work out and the striker had further loan spells with Sheffield United and Crystal Palace before making a permanent move to Hibs last year where he teamed up with former Falkirk boss John Hughes.
