Tim Henman, Greg Rusedski and Heather Watson will be joined by another player to contest an exhibition match on June 9 to mark the renaming of the court. The AEGON Classic WTA event then runs from June 9-15.
Jones, also won the French Open twice, as well as reaching six further Grand Slam finals.
Peter Bretherton, president of the LTA, said: "We are delighted that the new Centre Court at the Edgbaston Priory Club will be named in honour of Ann Jones.
"She is, without doubt, one of the all-time greats of women’s tennis both nationally and internationally and so it is only fitting that her achievements and contribution to our sport are recognised in this way at the very Tournament that she helped to bring to fruition."
French Open finalist Sara Errani is the latest name to confirm her participation in this year's event.
